As we’re now in October and seeing as it is also World Vegetarian Day, I thought I would share one of my favourite vegetarian dishes with you. After all, what can be more satisfying on the 1st of October than a warm Spinach and Ricotta Vegetarian Lasagne for dinner. As I have mentioned before, when my girls were little this used to be a mid week go to recipe. It’s very easy to prepare and great to simply pull out of the oven when you come through the door with hungry people. It has indeed been Sun temple-ised – enjoy and let me know how you get on!
