Nutty goat’s cheese balls

This recipe will take literally 15 minutes of your life. They are pretty and very delicious and add enough protein to a lunch time salad to be worth the effort.

Ingredients

150g firm goat’s cheese

80g salted mixed nuts

grated rind of 1 lemon or lime

With slightly wet hands shape the goats cheese into 10 balls, roughly the size of a golf ball.

Coarsely chop the mixed nuts. I used a little chopper thing I have, but a knife and chopping board are just as good. Mix the grated rind in with the nuts and roll the balls in this mixture until they are well coated. There is no special technique for this. Just get stuck in, remembering that you can re-shape the balls if perfect globes are your desire.

I have always served these as part of a salad but I should think they would be lovely as a nibble with a summer time BBQ or a buffet style meal.
