Green Smoothie

Kale, Banana, Avocado, Lime and Oats

45g kale (I used the curly sort but either would be good)

150g banana (1 large one)

150g avocado

45g porridge oats

Juice of 1 lime

100ml homemade yogurt or 2 tsp Chia seeds

2tsp agave syrup or other natural sweetener

A handful of ice cubes

Kale is amazing, and it grows here in St. Lucia.

 

  • Kale can provide you with some special cholesterol-lowering benefits if you will cook it by steaming, or use it raw as in our smoothie. The fiber-related components in kale bind together with bile acids in your digestive tract. When this binding process takes place, it’s easier for bile acids to be excreted, and the result is a lowering of your cholesterol levels.

For those of you dairy intolerant, use 2 tsp chia seeds instead of the yog but blend everything really well first and wait about 5 minutes after adding the Chia seeds. They absorb liquid like nobody’s business and will turn your smoothie into a lovely pudding consistency.

 

This quantity is enough for 2 generous portions. We had it for Sunday morning breakfast and it kept us going nicely until lunchtime.
