This is my 100th posting for Sun Temple Food and would you believe I didn’t plan for it to coincide with Christmas? How cool and serendipitous is that? So, we decided to celebrate the 100th recipe (which will be posted a little later) with a short behind the scenes video of us making Pastelles – a very Trinidadian Christmas tradition. Pastelles are delicious patties made from heavily seasoned meat wrapped in a corn pancake and steamed in banana leaves and they are a joy to make.
