Making Almond Milk

Soak 1 cup of blanched almonds over night in 3 cups of water. Place both nuts and water in food processor and blend until you have a uniform mush. I actually didn’t put all the water in for the first pulse as my machine makes a mess with too much liquid. If you do this, please don’t forget to add the remaining water.

Place a strainer over a large bowl and cover that with a clean muslin cloth. If you have a jelly-straining bag, this works well too. Empty nut mush into muslin and squeeze until no more milk is coming out. I twist my loaded muslin one way then the other. I have saved the resulting ground almond to turn into something scrumptious. Don’t know what yet.

Your resulting milk can be sweetened by further blending it with 2 or 3 dates or with some honey or agave. Use for smoothies, such as Banana Nut Butter smoothie or the Green smoothie. If you are dairy intolerant use in place of animal’s milk.

    So, how do you make “nut butter”? Or do you just buy either peanut, or almond butter?

      You could use bought butters such as peanut or almond, but I will post my recipe soon….
