I love Okra (Okroes in the Caribbean), but I know that many people are put off by their “slime.” This recipe manages to eliminate the slime and is delicious and takes a mere 10 minutes of your time.
Serves 3
Approximately 20 small Okra. You don’t need to be very specific with this.
1 cm piece fresh ginger
2 tbsp olive oil
salt and pepper
Method
Heat up a heavy frying pan or skillet (mine is the arm breaking le Creuset generic for neurontin variety). Cut the “Ladies Fingers” crossways into 1 cm slices and tip in them into the dry, but hot pan and stir around a bit until they are looking dried out. About 5 minutes. Pour in the oil, which will sizzle a bit and the ginger, salt and pepper. Stir to mix properly and cook for a further 2 or 3 minutes. That’s it!! Sure to convert even the squeamish.
